Autumn is my favorite time of the year and one of the first things I do to celebrate its arrival is to place pumpkin scented candles throughout our home. While the "artificial" pumpkin smell is nice to prepare us for the fall season nothing beats the aroma that permeates the house as we prepare some of the following yummy pumpkin treats.
Perfect Pumpkin Bread
- 3 1/2 c flour
- 3 c sugar
- 2 tsp baking soda
- 1 1/2 tsp. salt
- 2 c. cooked fresh (or canned) pumpkin
- 1 c. vegetable oil
- 2/3 c water
- 4 eggs
- 2 c peanut butter chips
- 1 c chopped nuts
Grease and flour three loaf pans. In medium mixing bowl combine flour, sugar, baking soda, salt, and cinnamon; set aside. In large mixing bowl, blend pumpkin with oil, water, and eggs. Mix the dry ingredients in gradually until well blended. Stir in peanut butter chips and nuts.
Pour mixture into9 prepared pans and bake at 350 degrees for 50-60 mins. Cool at least ten minutes.
Pumpkin Cookies With Penuche Frosting
Cookies:
1/2 c sugar
1/2 c firmly packed brown sugar
1 c margarine
1 c canned pumpkin
1 tsp. vanilla
1 egg
2 c all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
3/4 c chopped walnuts
Heat oven at 350 degrees. In large bowl beat sugar, brown sugar, and margarine until light and fluffy. Add pumpkin, vanilla, and egg; blend well. Add flour, baking powder, baking soda, cinammon and salt; mix well. Stir in walnuts. Drop dough by rounded spoonfuls 2 inches apart on cookie sheet. Bake for 10-12 minutes. Cool completely.
Frosting:
3 Tbsp. margarine
1/2 c firmly packed brown sugar
1/4 c milk
1 1/2-2 c powdered sugar
In medium saucepan combine 3 tbsp margarine and brown sugar. Bring to boil. Cook over medium heat for one minute or until slightly thickened, stirring constantly. Cool 10 minutes. Add milk; beat until smooth. Beat in enough powdered sugar for desired spreading consistency. Frost cooled cookies.

Add gelatin to 1/4 c. cold water. Stir and set aside.
Beat together 2 eggs, 3/4 c. sugar and cream cheese. Pour into graham cracker crust and bake at 350° F for 20 minutes.
Cook pumpkin, egg yolks, 1/2 c. sugar, milk, salt, and cinnamon over medium heat until thickened. Stir in the gelatin mixture and allow to cool.
Beat egg whites until fluffy. Add 1/4 c. sugar. Fold into cooled pumpkin mixture. Then, spread over cream cheese layer. Cover and chill for at least 2 hours.
Beat the cream until stiff peaks form. Sugar may be added to sweeten the whipped cream, if desired. Spread over chilled torte and serve.
We don't celebrate halloween so we don't carve pumpkins but we do enjoy making a "harvest scene" in our yard with bales of hay, cornstalks, autumn colored flowers, pumpkins, and a scarecrow. We recently took a field trip to Rock City Gardens. They were hosting their annual Oktoberfest/Autumn Festival and I thought the following photo would be perfect for this post since there are pumpkins in the picture.
